With the San Prudencio festivities just days away, the price per kilo of perretxikos in Álava's markets is ranging between 39 and 99 euros, influenced by size and origin, as demand continues to rise.

As is customary every year, the approaching San Prudencio festivities bring perretxikos into the culinary spotlight and to the markets of Álava. This year, prices show a significant range, fluctuating between 39 and 99 euros per kilo, depending on the product's origin, size, and quality.
This price volatility is characteristic of perretxikos, as their market value is heavily dependent on weather conditions and available supply. Last year, more than a week before San Prudencio, a kilo was sold for between 60 and 75 euros, while in 2024, during the same period, prices were between 40 and 55 euros. This highlights the product's inherent unpredictability.

At the Plaza de Abastos, several stalls are already offering this delicacy closely associated with April. Vendors report having mixed perretxikos, both from Álava and Navarra, and have noted a slight delay in the season. Nevertheless, demand is strong, and it is expected to intensify further in the coming days.
The perretxiko is a demanding mushroom that requires a precise balance of sun and rain, avoiding both extreme cold and heat. Factors such as the south wind or drier weather also influence the quantity of available specimens, directly impacting its price. It is anticipated that prices will begin to fall once May commences.
In addition to perretxikos, snails are also available at the Plaza de Abastos, offered in various formats: live, in mesh, or already cooked. Their prices range from 12.95 to 21.90 euros per kilo, making them another traditional product gracing Álava's tables during the San Prudencio festivities.
