Martínez Restaurant in Ordizia, with 136 years of history, began a new chapter on April 15, with a change in management aimed at preserving tradition while updating its culinary offerings.

Martínez Restaurant in Ordizia, a culinary landmark in the town, has entered a new phase. After 136 years of operation, the business has seen a change in leadership, with an in-house team taking the reins. The establishment reopened its doors on April 15, following some renovation work, celebrating the occasion with a generous pintxo-pote.
Founded in 1890 by José Martín Martínez, the restaurant was located in the same building on Santa María street it occupies today. Initially known as Fonda Urdaneta de Martínez, it offered lodging, meals, and served as a post stop for travelers on the Madrid-Irún route. Over the years, the business has evolved, adapting to new generations and witnessing the life of the town.
The management of the business has now been taken over by Igor Garikano, who has been the right-hand man of the previous owner for the past 30 years. Although not strictly the fifth generation, it is considered a continuation of the family tradition. He will be accompanied in this new stage by Rida Benyahya, who will oversee the bar and dining area. Garikano has stated that the restaurant will remain true to its essence and local produce, open to customer suggestions and offering surprises.

"Although it is not strictly the fifth generation, it is as if it were."

The restaurant's signature dishes, such as stuffed hake and meatball sandwiches, will be maintained, as Garikano has assured that he will respect tradition and guarantee culinary quality. The establishment will continue to be an important part of Ordizia's history and gastronomy, offering a unique experience to its diners.
