The Provincial Council of Gipuzkoa and the Hospitality Association are set to launch a network of 'ostatus' to enhance the tourism appeal of the region's interior and promote their gastronomic value.

Gipuzkoa will soon feature a network of 'ostatus' (traditional hospitality establishments) aimed at strengthening the tourism appeal of the territory's inland areas and highlighting the gastronomic value of these businesses, which are deeply rooted in the local society and culture. The initiative, presented yesterday in Orendain, is being driven by the Provincial Department of Mobility, Tourism, and Spatial Planning, along with the Association of Hospitality Entrepreneurs. It is designed to benefit both visitors and local residents.
The presentation was attended by representatives from the municipalities hosting these 'ostatus', as well as tourism officials from the Goierri and Tolosaldea regions, in addition to the two sponsoring entities.

"These 'ostatus' are 'social epicenters for many small municipalities, basing their gastronomic offerings on traditional cuisine and zero-kilometer products.' They are also described as 'essential guardians of our culinary identity.'"

Azahara Domínguez · Provincial Deputy for Mobility, Tourism, and Spatial Planning of Gipuzkoa
Domínguez further emphasized that this type of establishment is 'unique and singular, not found outside of Gipuzkoa'.

"The project will 'increase visibility for the tourist offering, bringing establishments that are often overlooked to the forefront; and attract more suitable visitors who truly align with these establishments.' She highlighted that 'ostatus possess attributes highly aligned with current tourist demand: authenticity, traditional gastronomy, and a strong connection to the territory and rural environment.'"
